Monster Pancakes - The spook-tacularly healthy way to start Halloween

Makes 6 pancakes I Prep 20 minutes

Ingredients

  • 3 ½ oz or 1 cup rolled oats
  • 2 oz or 2 cups baby spinach
  • 1 egg
  • 1 banana
  • 4 fl oz or ½ cup milk of choice
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • toppings of choice for faces

    Method

    Place the oats into a high-speed food processor and blitz until you have a coarse flour. Transfer to a mixing bowl and add the baking powder. Stir to combine.

    Place all remaining ingredients, except the egg, into food processor and blitz until completely smooth.

    Pour the green liquid into the bowl of dry ingredients, crack in the egg, and whisk until well incorporated.

    Heat a large frying pan over a medium heat. Once hot, add a touch of butter or
    coconut oil and pour the batter in quarter cupfuls into the frying pan.

    Cook for about 5 minutes on one side. Gently and carefully flip the pancakes and cook for about 3 minutes on the other side until fully cooked through.

    Keep the cooked pancakes warm on a plate and repeat with remaining spinach
    pancake batter.

    Serve the pancakes on your favourite Stickie plate and have fun creating grizzly monster faces!
