Spiced Pumpkin Muffins - The healthy toddler treat (at Halloween and any other day)

The healthy toddler muffin recipe we’re sharing with you today combines all the goodness of pumpkin puree with the sweetness of maple syrup and a hint of cinnamon.
It’s the perfect Halloween treat for your toddler but ticks all the fussy toddler boxes all year round.
All you need is a set of Muffin Cups and a mixing bowl to go from zero to hero in no time.
We try to have some on standby at all times for hungry moments or when out and about.

Makes 12 muffins I Prep 15 minutes I Bake 25 minutes
- 2 ½ fl oz or ⅓ cup coconut oil, melted
- 4 fl oz or ½ cup maple syrup
- 7 oz or 2 cups oat flour
- 9 oz or 1 cup pumpkin purée
- 1 tbsp baking soda
- 1 tsp vanilla extract
- 2 fl oz or ¼ cup milk of choice
- 1 tsp cinnamon
- 2 eggs, room temperature⠀
Preheat oven to 160 C and line a 12-cup muffin tray with We Might Be Tiny muffin cups.
In a large mixing bowl, combine oil and maple syrup with a whisk.
Add eggs and beat well.
Add all remaining ingredients, except oat flour, and stir with a large spoon to combine.
Add oat floor and stir gently until combined. Try to avoid over mixing.
Divide the batter evenly between the muffin cups and bake in oven for 20-25 minutes or until a toothpick inserted into a muffin comes out clean.
Allow to cool slightly before enjoying.
