Rainbow Rice balls

These little colourful rainbow rice balls make a perfection companion for almost all dishes.
Using natural juices to add colour into toddler food helps to encourage variety in their diet, plus get them familiar with different flavours – which is shown to help establish healthy habits later in life.
Simply add steamed or roasted veggie sticks to make a little meal or snack.
Ingredients
CARROT
- 200 g (1 cup) short-grain/medium-grain white rice
- 500 ml (2 cups) carrot juice
- 125 ml (1/2 cup) water
- 1 tbsp butter
BEETROOT
- 200 g (1 cup) short-grain/medium-grain white rice
- 250 ml (1 cup) beetroot juice
- 325 ml (1 1/2 cups) water
- 1 tbsp butter
COCONUT
- 200 g (1 cup) short-grain/medium-grain white rice
- 250 ml (1 cup) coconut milk
- 325 ml (1 1/2 cups) water
Method
- Wash rice until water runs clean.
- Bring water and carrot juice/beetroot juice/coconut milk to a boil.
- Stir rice into the boiling liquid and simmer for 20 - 30 minutes.
- Remove lid and add one tablespoon of butter/coconut oil before turning off the heat.
- Let rice cool a little before rolling into little balls.
Store in an airtight container in the fridge for up to three days.
Notes
If the rice sticks to your hands lightly rinse them with water frequently.
